Ingredients/Components

  • baking soda - 1/2 tsp
  • white sugar - 1 c
  • pepper to taste - 1 item
  • salt to taste - 1 item
  • Great Northern beans - 2 lb
  • salt pork - 2 lb

How to make old-fashioned baked beans:

Slice pork to rind (not all the way through). Freshen pork by boiling to get out salt. May have to be done twice. Add fresh water and cook until tender. Save liquid to add to beans. Cook beans in large pan with baking soda. Bring to boil. Pour off water and add fresh water. Cook until skins start to fall off. Place in casserole. Add liquid from pork. Place pork on top of beans. Bake at 350° for 1 1/2 hours or until beans are brown. Add more water while cooking so beans do not dry out, then enjoy!
