Oatmeal muffins
Ingredients/Components
- salt - 1 tsp
- brown sugar - 1/2 c
- soda - 1/2 tsp
- buttermilk - 1 c
- baking powder - 1 tsp
- plain flour - 1 c
- quick cooking oatmeal - 1 c
- egg, beaten - 1 item
- melted shortening - 1/3 c
How to make oatmeal muffins:
Soak oatmeal in buttermilk for one hour. Add beaten egg and brown sugar. Mix and stir dry ingredients; then add these in liquid ingredients. Add melted shortening, mixing well but do not beat too much. Fill greased muffin tins 2/3 full and bake at 400° for 20 minutes. Makes 16.Recipe categories: Breads, Quick breads, Muffins.
