Ingredients/Components
- cinnamon - 1/2 tsp
- eggs - 2 item
- vanilla - 1 tsp
- milk - 1/4 c
- salt - 1/4 tsp
- brown sugar - 1 c
- coconut - 1/2 c
- soda - 1 tsp
- baking powder - 1 tsp
- boiling water
- shortening - 1/2 c
- sifted flour
- brown sugar, firmly packed - 1/2 c
- white sugar - 1 c
- nutmeats - 1/2 c
- quick cooking oatmeal - 1 c
- Cream shortening with sugars
How to make oatmeal cake:
Pour boiling water over oatmeal and let stand 20 minutes. Cream shortening with sugars. Add eggs one at a time, beating well after each addition. Sift together dry ingredients. Add to creamed mixture alternately with oatmeal mixture. Pour in a 9 x 12-inch loaf cake pan. Bake at 350° for 30 to 35 minutes.Frosting:1/3 c. butter1/4 c. milk1/2 c. coconut1/2 c. nutmeats1/2 c. brown sugar, firmly packed1 tsp. vanilla Combine butter, sugar and milk. Place in heavy pan over low heat and stir until sugar is dissolved. Continue cooking until mixture reaches a full, rolling boil. Remove from heat and add remaining ingredients.
