Ingredients/Components
- large onions, chopped - 2 item
- chopped parsley - 1/4 c
- black pepper - 1/4 tsp
- mushrooms, sliced thin - 1/2 lb
- low sodium beef broth - 4 c
- medium size barley - 1/2 c
- medium size carrots, sliced - 3 item
How to make mushroom barley soup:
Place all ingredients in a large heavy saucepan and bring to a boil on high heat about 4 minutes. Adjust heat so mixture bubbles gently, and simmer, partly covered, for 40 minutes or until the barley is tender.Recipe categories: Low protein, Soups & stews, Pasta, rice and grains.
