  • large onions, chopped - 2 item
  • chopped parsley - 1/4 c
  • black pepper - 1/4 tsp
  • mushrooms, sliced thin - 1/2 lb
  • low sodium beef broth - 4 c
  • medium size barley - 1/2 c
  • medium size carrots, sliced - 3 item

How to make mushroom barley soup:

Place all ingredients in a large heavy saucepan and bring to a boil on high heat about 4 minutes. Adjust heat so mixture bubbles gently, and simmer, partly covered, for 40 minutes or until the barley is tender.
