Ingredients/Components

  • water - 2 c
  • vegetable oil - 1 Tbsp
  • pepper - 1/4 tsp
  • bay leaf - 1 item
  • onion, chopped - 1/2 c
  • chopped parsley - 1/2 c
  • sliced mushrooms
  • barley - 1/2 c
  • thyme - 1/4 tsp
  • rosemary - 1/4 tsp
  • can beef broth - 1 3/4

How to make mushroom barley soup:

Over medium heat, saute onion in oil until soft. Add mushrooms; cook about 4 minutes until tender. Add remaining ingredients. Bring to a boil. Reduce heat to low. Simmer, covered, about 1 hour or until barley is tender. Remove bay leaf. Serves 4.
