Ingredients/Components

  • sliced fresh mushrooms - 1/2 lb
  • dry white wine - 3 Tbsp
  • ketchup - 2 Tbsp
  • olive oil
  • sirloin, cut into strips - 1 lb
  • 1-2 cloves garlic, crushed
  • large eggplant, peeled & cut into thin strips - 1 item
  • scallions sliced or 1 small onion, chopped - 4 item
  • red bell pepper cut into strips - 1/2 item
  • green bell pepper cut into strips - 1/2 item
  • can tomatoes or 4 med - 1 14
  • cup sliced Kalamata ripe olives - 1/2 item
  • crumbled feta - 3 oz

How to make moussaka:

Cook beef in oil, remove beef. Add more oil if needed and cook garlic, egg plant, scallions for 5 minutes. Add mushrooms and peppers, cook 5 minutes. Add ketchup, wine, olives. Simmer 5-8 minutes, add beef, heat. Serve alone or on rice or pasta.

Top with feta cheese. This dish works well using Brinkman Farms canned beef added at end and heated thoroughly.

Serves 4-5.
