Moussaka stir-fry
Ingredients/Components
- sour cream - 1/4 c
- garlic powder - 1 tsp
- pepper - 1/4 tsp
- dried oregano, crushed - 1 tsp
- ground beef - 1 lb
- olive oil - 3 Tbsp
- tomato paste - 1/4 c
- beef or chicken broth - 1/2 c
- small eggplant, cut in 1/4-inch rounds - 1 item
- medium yellow or green pepper, cut in 1-inch pieces - 1 item
- each: frozen chopped onion and green peas - 1 c
- Feta cheese, crumbled 1/2 c - 2 oz
How to make moussaka stir-fry:
In a large bowl, mix beef, garlic powder, oregano and pepper. In a medium size bowl mix broth, tomato paste and sour cream. Heat 1 tablespoon of oil in a large deep skillet over high heat until hot but not smoking. Add meat mixture and stir-fry, breaking up with a large spoon until no longer pink. Spoon into a large bowl. Heat remaining oil in the skillet. Add eggplant and stir-fry 2 to 3 minutes until slightly softened. Add bell peppers and stir-fry about 1 minute, until crisp-tender and eggplant is tender. Add to beef mixture.Add frozen onion and green peas to skillet. Stir-fry 1 minute until thawed. Add broth mixture; bring to a boil for 30 seconds until thickened.
Return beef and vegetables to pot. Stir-fry 1 minute until beef and vegetables are evenly coated with sauce. Sprinkle with cheese.
