Mom's coconut cake
Ingredients/Components
- butter, softened - 1 c
- sugar - 2 c
- eggs - 4 item
- vanilla - 1 tsp
- milk - 1 c
- salt - 1/2 tsp
- cornstarch - 3 Tbsp
- water - 1/2 c
- egg yolks - 3 item
- coconut - 1 item
- baking powder
- egg whites - 3 item
- cream of tartar - 1/2 tsp
- flour, sifted - 3 c
- butter flavoring - 1 tsp
- lemon juice - 1/4 c
- orange juice - 3/4 c
- grated orange rind - 1 Tbsp
- Gradually add sugar, beating well
- Orange Filling - 1 item
- Divinity Frosting - 1 item
- Gradually stir in orange juice and water
How to make mom's coconut cake:
Beat butter at medium speed with an electric mixer until creamy. Gradually add sugar, beating well. Add eggs, one at a time, beating after each addition.Combine flour, baking powder and salt. Add to butter mixture alternately with milk, beginning and ending with flour mixture. Mix well. Stir in flavorings. Pour into 3 greased and floured 9-inch round cake pans. Bake at 350° for 20 to 25 minutes. Cool in pans 10 minutes. Remove from pans and let cool on wire racks.Mom's Orange Filling:1 c. sugar3 Tbsp. cornstarch1/4 tsp. salt3/4 c. orange juice1/4 c. lemon juice1/2 c. water3 egg yolks1 Tbsp. grated orange rind Combine first three ingredients in a small saucepan. Gradually stir in orange juice and water. Cook over medium heat, stirring constantly, until mixture thickens and boils.
Beat egg yolks until thick and pale. Gradually stir about 1/4 of hot mixture into yolks, stirring constantly. Add rest of hot mixture. Boil 1 minute. Remove from heat. Stir in orange rind. Cool completely. Makes about 2 cups. After this cools, spread between cool cake layers.Mom's Divinity Frosting:1 1/2 c. sugar1/2 tsp. cream of tartar1/2 c. water3 egg whites1/2 tsp. vanilla Combine first 3 ingredients in a heavy saucepan. Cook over medium heat, stirring constantly until mixture is clear. Cook without stirring until candy thermometer registers 240°.
