Molded cucumber salad
Ingredients/Components
- pkg - 1 oz
- boiling water - 1 c
- mayonnaise - 1/2 c
- cottage cheese
- medium onion, finely chopped - 1 item
- white vinegar - 1 tsp
- chopped walnuts or pecans - 1/2 c
- medium cucumber can substitute zucchini, finely chopped - 1 item
How to make molded cucumber salad:
Dissolve gelatin in boiling water. Set aside to cool. In another bowl, combine cucumber, onion and cottage cheese (or if desired, puree cucumber, onion and cottage cheese in blender).Combine cucumber mixture with vinegar and mayonnaise. Stir in gelatin mixture and nuts. Mix well. Pour into a lightly oiled 4-cup mold. Refrigerate until firm. Unmold and serve on lettuce leaves.
