  • evaporated milk - 1/2 c
  • cocoa - 1/2 c
  • confectioners sugar
  • all-purpose flour
  • margarine - 1 c
  • miniature marshmallows
  • margarine, melted - 1/2 c
  • pecans, chopped - 1 c

How to make mississippi mud cake:

Batter:2 c. sugar1/4 tsp. salt1 tsp. vanilla1 c. margarine4 eggs1 1/2 c. all-purpose flour1/2 c. cocoa Icing:16 oz. confectioners sugar1/2 c. margarine, melted1/2 c. evaporated milk1/3 c. cocoa In oven, melt margarine in a 9 x 13-inch cake pan. Cool. In a bowl, beat eggs and add sugar. In second bowl, sift together flour, salt and cocoa. Add to egg mixture. Add melted margarine, vanilla and nuts. Pour into pan that margarine was melted in. Bake in a preheated 350° oven for 35 minutes. Place marshmallows on top of cake and return to oven for 5 to 10 minutes or until marshmallows are melted.

Icing: Mix icing ingredients in a bowl. Beat until smooth. Drizzle over cooled cake. This cake is rich, but good!
