Ingredients/Components

  • sugar - 2 Tbsp
  • can stewed tomatoes - 1 oz
  • cooked pasta - 2 c
  • can kidney beans - 1 oz
  • can garbanzo beans - 1 oz
  • cans beef broth - 3 oz
  • frozen mixed vegetables
  • can V-8 juice - 1 oz
  • fresh torn spinach - 2 c
  • can Italian tomato paste - 1 oz
  • fresh Parmesan cheese - 1 item

How to make minestrone soup:

Bring to a boil all ingredients except Parmesan cheese and cooked pasta. Simmer 10 minutes. Remove from heat and refrigerate overnight. Reheat. Add pasta and cheese.
