Ingredients/Components

  • sour cream - 1 item
  • small onion, chopped - 1 item
  • olive oil - 2 Tbsp
  • spaghetti - 1 lb
  • green pepper, chopped - 1 item
  • Cheddar cheese, shredded - 1 item
  • cumin - 1 Tbsp
  • cans black beans, drained - 2 item
  • salsa or picante sauce - 1 item
  • jalapeno peppers, if desired - 1 item
  • or 1 fresh clove garlic, minced - 2 Tbsp
  • jar of tomatillo sauce - 16 oz

How to make mexican spaghetti:

Prepare spaghetti as directed. While pasta is cooking, in a large skillet, saut?© garlic, onion, and green pepper in olive oil. Add tomatillo sauce, cumin, and black beans. Mix well and allow to simmer for 5-10 minutes.

Make a "nest" out of prepared spaghetti. Layer salsa, do not stir. Add a scoop of prepared mixture on top. Add shredded cheese and sour cream on top.
