Mexican spaghetti
Ingredients/Components
- sour cream - 1 item
- small onion, chopped - 1 item
- olive oil - 2 Tbsp
- spaghetti - 1 lb
- green pepper, chopped - 1 item
- Cheddar cheese, shredded - 1 item
- cumin - 1 Tbsp
- cans black beans, drained - 2 item
- salsa or picante sauce - 1 item
- jalapeno peppers, if desired - 1 item
- or 1 fresh clove garlic, minced - 2 Tbsp
- jar of tomatillo sauce - 16 oz
How to make mexican spaghetti:
Prepare spaghetti as directed. While pasta is cooking, in a large skillet, saut?© garlic, onion, and green pepper in olive oil. Add tomatillo sauce, cumin, and black beans. Mix well and allow to simmer for 5-10 minutes.Make a "nest" out of prepared spaghetti. Layer salsa, do not stir. Add a scoop of prepared mixture on top. Add shredded cheese and sour cream on top.
