Mexican cornbread
Ingredients/Components
- sugar - 1 c
- eggs - 4 item
- salt - 1/4 tsp
- flour - 1 c
- baking powder - 4 tsp
- margarine - 1 c
- yellow cornmeal - 1 c
- can cream-style corn - 1 item
- grated Jack cheese - 1/2 c
- can chopped green chili peppers - 1 oz
- grated Tillamook or any sharp cheese - 1/2 c
How to make mexican cornbread:
Cream the margarine and sugar. Add eggs, one at a time, mixing well. Add chopped peppers, corn, cheese and salt; mix well. Sift together the flour, cornmeal and baking powder. Add to mixture. Pour into greased and floured oblong cake pan (9 x 13 x 3-inch). Preheat oven to 350°. Reduce heat to 300°. Bake for 1 hour.Recipe categories: Breads, Quick breads, North american.
