Mexican chicken casserole
Ingredients/Components
- evaporated milk - 1/2 c
- can cream of chicken soup - 1 item
- grated cheese - 1/2 lb
- can cream of mushroom soup - 1 item
- small chopped onion - 1 item
- flour tortillas - 1 pkg
- chopped jalapeno peppers - 1/2 c
- diced, boiled chicken - 4 c
How to make mexican chicken casserole:
Boil and dice chicken. Combine soups, peppers, onion, milk and diced chicken in a large saucepan. Bring to a boil. Soften the flour tortillas in the chicken broth. Line a 9 x 13-inch casserole dish with softened tortillas and pour a layer of chicken mixture on top of this. Top with grated cheese and repeat until casserole dish is full.
