Ingredients/Components

  • Velveeta cheese - 1/2 lb
  • can cream of chicken soup - 1 item
  • can Ro-Tel tomatoes - 1 item
  • medium onion - 1 item
  • can cream of mushroom soup - 1 item
  • taco Doritos - 1 pkg
  • whole chicken or 4 large chicken breasts - 1 item

How to make mexican chicken:

Boil and debone chicken. Place in bottom of greased casserole dish. Slice onion and place onion rings over top of chicken. Dice Velveeta cheese and place on top of onions. Crush bag of Doritos and put half on top of cheese. Mix together in a separate bowl the soups and tomatoes. Pour on top of Doritos. Put other half of crushed Doritos on top and bake at 400° for 45 minutes.

Can be frozen and served later!
