Meaty spinach manicotti
Ingredients/Components
- 8 oz manicotti shells - 2 pkg
- butter - 1/4 c
- milk
- flour - 1/4 c
- eggs, beaten - 2 item
- grated Parmesan cheese - 3/4 c
- bulk Italian sausage - 1 lb
- diced cooked chicken - 4 c
- 10 oz frozen chopped spinach, thawed & squeezed dry - 2 pkg
- 4 oz shredded Mozzarella cheese - 1 c
- cans 26 1/2 oz spaghetti sauce - 2 item
- minced fresh parsley - 1/4 c
How to make meaty spinach manicotti:
Cook manicotti according to package directions. Melt butter in saucepan. Stir in flour until smooth. Gradually add milk. Bring to boil, cook and stir 2 minutes until thickened. Stir in Parmesan cheese until melted, set aside.In skillet, cook sausage over medium heat until no longer pink; drain. Add chicken, spinach, eggs, Mozzarella cheese and 3/4 cups white sauce. Stuff manicotti shells. Spread 1/2 cup spaghetti sauce each in 2 ungreased 9 x 13 baking dishes. Top with manicotti. Pour remaining white sauce, stirring constantly. Pour over spaghetti sauce.
Bake uncovered 45-50 minutes at 350 degrees.
