Mango bread
Ingredients/Components
- sugar - 3 c
- cinnamon - 4 tsp
- eggs - 6 item
- vanilla - 2 tsp
- salt - 1 tsp
- flour - 4 c
- coconut - 1 c
- oil - 3/4 c
- soda - 4 tsp
- raisins - 1 c
- diced mangos 4 or 5 ripe mangos - 4 c
- chopped nuts Macadamia or other - 1 c
How to make mango bread:
Mix flour, soda, cinnamon, salt and set aside. Beat the eggs while gradually adding the sugar. Add the oil and vanilla. To the egg mixture, add 1 cup of flour mixture and 1 cup mangos. Repeat until all is blended. Add nuts, raisins and coconut. Spoon into 4 loaf pans. Bake at 350° for 55 to 60 minutes.This recipe called for 1 1/2 cups of oil. I reduce the oil to 3/4 cup; probably could use less than that. Also cut the sugar down to 1 cup. Enjoy!
