  • pkg - 1 oz
  • milk - 1/4 1/2
  • dairy sour cream - 4 oz
  • margarine or butter - 1 Tbsp
  • salt to taste - 1 item
  • thyme - 1/4 tsp
  • pepper or white pepper - 1/4 tsp

How to make make-ahead mashed potatoes:

Cook or boil pared potatoes until tender; drain. In a large bowl mash with a potato masher or beat with electric mixer on low speed. Add sour cream, cream cheese, 1 tablespoon margarine or butter, salt, pepper and thyme. Gradually beat in enough of the milk to make smooth and fluffy. Turn into a greased 1 1/2-quart casserole. Cover with foil and chill up to 24 hours.

To serve, dot with a tablespoon of margarine or butter. Cook, covered, on High for 8 to 10 minutes (microwave) or in 350° oven for 45 minutes until heated through (uncovered). Makes 6 servings.
