Ingredients/Components
- sugar - 1/4 c
- vanilla - 1/2 tsp
- pkg - 1 1/2
- salt - 1/2 tsp
- baking soda - 1/2 tsp
- egg - 1 item
- shortening - 1/2 c
- all-purpose flour
- firmly packed brown sugar - 1/2 c
- powdered sugar - 1/2 c
- butter or margarine, softened - 1/2 c
- chopped peanuts - 1 c
- cream of tartar - 1/2 tsp
- whole wheat flour - 1/2 c
How to make lunchbox cookies:
Heat oven to 350°. In large bowl, combine brown sugar, powdered sugar, margarine and shortening; beat until light and fluffy. Add vanilla and egg; blend well. Spoon flour into measuring cup; level off. Add flours, baking soda, salt and cream of tartar. Blend at low speed until well mixed. Stir in peanuts and almond chips. Shape heaping tablespoons into balls (using dough). Roll in sugar.Place 3-inches apart on ungreased sheet. With fork, dipped in sugar, flatten in crisscross pattern. Bake at 350° for 10 to 14 minutes or until golden brown. Cool 1 minute. Remove from sheet. Yields 30 cookies.
