Lime pickles
Ingredients/Components
- sugar - 8 c
- salt - 1 Tbsp
- cold water - 2 gal
- vinegar - 2 qt
- celery seed - 1 tsp
- whole cloves - 1 tsp
- medium cucumbers - 8 lb
- mixed pickling spices - 1 Tbsp
- hydrated lime - 2 c
How to make lime pickles:
Slice cukes in 1/4-inch slices. Cover with lime and water. Soak 24 hours. Rinse well. Cover with ice water for 3 hours. Drain and cover with other ingredients. Let stand overnight. Boil gently about 35 minutes. Pack in jars. This makes a crisp pickle. Add a little green coloring if desired.
