Ingredients/Components
- sugar - 1 c
- butter or margarine - 1/2 c
- flour - 1 c
- eggs, beaten - 2 item
- baking powder - 1/2 tsp
- powdered sugar - 1/4 c
- lemon juice - 3 Tbsp
- grated lemon rind - 1/2 tsp
How to make lemon squares:
Combine 1 cup flour and 1/4 cup powdered sugar. Cut in butter with pastry blender until mixture resembles coarse meal. Press into a 9-inch square pan. Bake at 350° for 15 minutes.Combine eggs, 1 cup sugar, lemon rind and juice in a bowl; mix well. Combine 2 tablespoons flour and baking powder. Add to egg mixture, stirring well. Pour mixture over baked crust.
Bake at 350° for 20 minutes or until lightly browned and set. Sprinkle lightly with 2 tablespoons powdered sugar. Cut into squares when cooled.
