Ingredients/Components
- sugar
- eggs - 3 item
- flour
- butter - 3/4 c
- powdered sugar - 1/3 c
- grated rind and juice of fresh lemon - 3 Tbsp
How to make lemon squares:
Mix butter, powdered sugar and 1 1/2 cups flour until crumbly like pie dough. Bake in small oblong pan at 350° for 20 minutes. Beat eggs slightly and then add sugar, 3 tablespoons flour and grated rind and juice of fresh lemon. Cover baked crust with egg mixture and bake 20 minutes or until firm. Sift powdered sugar over.Note: One and a half cups of sugar makes it pretty oozy. One cup is better. Be sure before removing from oven that it is set.
