Lemon squares

Ingredients/Components

• sugar - 1 c
• eggs - 2 item
• salt - 1/4 tsp
• flour - 1 c
• confectioners sugar - 1/4 c
• baking powder - 1/2 tsp
• lemon juice - 2 Tbsp
• butter or oleo - 1 c

How to make lemon squares:

Mix flour, butter and confectioners sugar together well. Press into bottom of 9 x 13-inch pan. Bake at 350° for 20 minutes. Beat eggs, 1 cup sugar, baking powder, salt and lemon juice until fluffy, about 3 minutes. Pour over hot crust. Bake at 350° for 25 minutes. Cool. Cut into squares.
