Ingredients/Components

  • granulated sugar - 3/4 c
  • salt - 1/4 tsp
  • water - 3 Tbsp
  • baking soda - 1 tsp
  • oleo, softened - 1/3 c
  • grated lemon rind - 1 Tbsp
  • cake flour
  • fresh lemon juice - 2 tsp
  • reduced-fat sour cream - 1 c
  • egg whites, at room temperature - 3 item
  • Lemon Syrup recipe follows - 1 item
  • powdered sugar for sprinkle - 1 item
  • In large mixing bowl, beat sugar and oleo until smooth and fluffy

How to make lemon pound cake:

Spray 6-cup fluted cake pan with nonstick cooking spray. In large mixing bowl, beat sugar and oleo until smooth and fluffy. Beat in sour cream, egg whites, lemon rind and lemon juice until smooth. Sift together flour, baking soda and salt and add to batter. Mix until smooth, about 1 minute.

Spoon batter into prepared pan and bake in preheated 350° oven 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack 20 minutes; invert onto wire rack.Lemon Syrup:2/3 c. powdered sugar1/4 c. fresh lemon juice3 Tbsp. water In small saucepan, combine powdered sugar, lemon juice and water. Heat to boiling, stirring constantly, until sugar is dissolved. Cool slightly.

Pierce cake top at 1-inch intervals with skewer or fork. Spoon warm syrup over cake. Sprinkle with powdered sugar just before serving.
