Ingredients/Components
- sugar - 1 c
- eggs - 4 item
- baking powder - 1 tsp
- pinch of salt - 1 item
- lemon extract - 1 tsp
- fresh lemon juice - 1/4 c
- 2 sticks butter, softened - 1 c
- glaze - 1 item
- cake flour, lightly spooned into measuring cup - 2 c
How to make lemon cake:
Preheat oven to 350°. Put cake flour, sugar, baking powder, salt and grated lemon rind into mixer bowl. Turn mixer on low and mix 10 seconds to aerate. Add butter; beat 30 seconds or until well incorporated. Add eggs, lemon juice and extract. Beat until mixture is light in color, about 2 minutes. Spoon into a greased and floured tube or Bundt pan (8-inch is better). Bake for 30 to 40 minutes or until the cake springs back lightly when pressed and a toothpick comes out clean.Glaze: Stir together 1 cup confectioners sugar and 1 1/2 to 2 tablespoons fresh lemon juice. Spread on cooled cake.
