  • butter, softened - 1/2 c
  • sugar - 1/4 c
  • flour
  • baking powder - 1/4 tsp
  • lemon juice - 3 Tbsp
  • Filling:2 eggs

How to make lemon-butter snowbars:

Filling:2 eggs3/4 c. sugar1/4 tsp. baking powder3 Tbsp. lemon juice2 Tbsp. flour In a mixing bowl, combine crust ingredients. Mix on low speed until blended (1 minute). Pat into ungreased 8-inch square pan. Bake 15 to 20 minutes, until edges brown.

Meanwhile, prepare filling. Pour filling over crust. Bake 18 to 20 minutes until set. Sprinkle with confectioners sugar (until it looks like snow). Cool. Cut into squares.

Filling: Combine all ingredients (filling) and blend well.
