Ingredients/Components

  • sugar - 1/2 c
  • salt - 1/4 tsp
  • water - 1/4 c
  • egg yolks - 4 item
  • egg whites - 4 item
  • envelope unflavored gelatin - 1 item
  • lime juice - 1/2 c
  • grated lime peel - 1 tsp
  • 9-inch baked pie shell - 1 item
  • heavy cream, whipped - 1 c
  • few drops green food coloring - 1 item

How to make key lime pie:

Thoroughly mix gelatin, 1/2 cup sugar and salt in saucepan. Beat together egg yolks, lime juice and water. Stir into gelatin mixture. Cook and stir over medium heat just until mixture comes to a boil. Remove from heat; stir in grated peel. Add food coloring, sparingly until pale green. Chill, stirring occasionally, until mixture mounds slightly when dropped from a spoon.

Beat egg whites until soft peaks form. Gradually add 1/2 cup sugar, beating to stiff peaks. Fold gelatin mixture into egg whites. Fold in whipped cream. Pile into cooled shell. Chill until firm. Spread with more whipped cream; edge with grated lime peel. Center with grated pistachio nuts. Trim with lime wedges.
