Key lime pie
Ingredients/Components
- sugar - 1/2 c
- salt - 1/4 tsp
- water - 1/4 c
- egg yolks - 4 item
- egg whites - 4 item
- envelope unflavored gelatin - 1 item
- lime juice - 1/2 c
- grated lime peel - 1 tsp
- 9-inch baked pie shell - 1 item
- heavy cream, whipped - 1 c
- few drops green food coloring - 1 item
How to make key lime pie:
Thoroughly mix gelatin, 1/2 cup sugar and salt in saucepan. Beat together egg yolks, lime juice and water. Stir into gelatin mixture. Cook and stir over medium heat just until mixture comes to a boil. Remove from heat; stir in grated peel. Add food coloring, sparingly until pale green. Chill, stirring occasionally, until mixture mounds slightly when dropped from a spoon.Beat egg whites until soft peaks form. Gradually add 1/2 cup sugar, beating to stiff peaks. Fold gelatin mixture into egg whites. Fold in whipped cream. Pile into cooled shell. Chill until firm. Spread with more whipped cream; edge with grated lime peel. Center with grated pistachio nuts. Trim with lime wedges.
