  • sugar - 1/4 c

  • chopped pecans - 1/2 c

  • grated orange rind - 1 Tbsp
  • whipping cream or half and half - 1/2 c
  • Kahlua or other coffee-flavored liqueur - 1/2 c
  • can chocolate fudge frosting
  • Kahlua or other coffee liqueur - 1/2 c

How to make kahlua chocolate cake:

Kahlua Date Cream Filling:2/3 c. chopped dates1/2 c. whipping cream or half and half1/2 c. Kahlua or other coffee liqueur1 egg, beaten1/4 c. sugar1 Tbsp. flour1/2 c. chopped pecans1 Tbsp. grated orange rind Kahlua Fudge Frosting:1 (16 oz.) can chocolate fudge frosting1 Tbsp. grated orange rind1 tsp. Kahlua or other coffee liqueur Cake: Combine first 6 ingredients in a large bowl; beat 2 minutes at highest speed of electric mixer. Line bottom of 2 greased (9-inch) round cake pans with waxed paper. Bake at 350° for 30 to 35 minutes.

When tested, wooden pick should come out clean. Cool in pans for 10 minutes. Remove from pans and peel off paper. Cool completely. Spread Date Cream Filling between layers. Top with Fudge Frosting.

Kahlua Date Cream Filling: Combine dates, cream and Kahlua in a heavy saucepan; cook over medium heat until mixture bubbles. Gradually stir about 1/4 of hot mixture into egg; add to remaining hot mixture, stirring constantly. Combine sugar and flour; mix well. Stir into date mix. Cook over medium heat, stirring constantly, until thickens. Remove from heat, stir in pecans and orange rind. Cool completely. Yield: about 1 cup.

Kahlua Fudge Frosting: Combine all ingredients; mix well. Yield: enough for 1 (9-inch) layer cake.
