Japanese fruit cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 6 item
- milk - 1 c
- flour - 5 Tbsp
- butter - 1 c
- baking powder - 3 tsp
- boiling water - 2 c
- self-rising flour - 3 c
- pecans - 1 c
- allspice - 1 tsp
- black walnuts - 1 c
- orange juice - 2 c
- candied cherries
- dates
- Add eggs and beat
- raisins, chopped or cut - 1 c
- coconut, grated frozen coconut may be used - 1 item
- coconuts, grated frozen coconut may be used - 2 item
How to make japanese fruit cake:
Cream butter; add sugar and mix well. Add eggs and beat. Mix flour, baking powder, spice and cinnamon together and sift. Reserve 1 cup flour mixture. Add remaining flour mixture and milk to first mixture. Add coconut. Sprinkle 1 cup flour over remaining ingredients and add to first mixture. Mix well. Pour into greased and floured cake pans. Bake at 350° until done. This will make 2 small or 1 large cake.Filling for Japanese Fruit Cake:4 c. sugar2 c. boiling water5 Tbsp. flour2 c. orange juice2 coconuts, grated (frozen coconut may be used) Mix flour, sugar and boiling water together. Let boil a few minutes. Add orange juice and boil until it starts to thicken. Add coconut; cook until thick enough to spread. Cool slightly and spread on cake.
