Italian tortellini soup
Ingredients/Components
- beef broth - 4 cans
- sweet Italian sausage, casing removed, browned - 1/2 lb
- box tortellini - 9 oz
- box spinach tortellini - 9 oz
- cabbage, shredded - 1/2 lb
- small green pepper, diced - 1 item
- medium zucchini, sliced - 1 item
- small red onion, chopped - 1 item
- medium tomato, diced - 1 item
- basil - 1 Tbsp
- salt and pepper to taste - 1 item
How to make italian tortellini soup:
Combine all ingredients in a large pot. Add salt and pepper. Bring to a boil over medium heat; reduce heat and simmer until pasta and vegetables are tender, about 15 to 18 minutes. Makes 5 quarts.From Bon Appetit.
