  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • flour - 2 c
  • coconut - 1 c
  • oil - 1/2 c
  • powdered sugar
  • stiffly beaten egg whites - 4 item
  • stick oleo - 1 item
  • soda, dissolved in 1 c - 1 tsp
  • beaten egg yolks reserve whites - 4 item
  • Mix flour and buttermilk in alternately with ingredients

How to make italian cream cake:

Mix first 4 ingredients together. Mix flour and buttermilk in alternately with ingredients. Add coconut, pecans and vanilla. Fold in egg whites. Pour into 2 greased and floured 8-inch round cake pans. Bake at 350° for 25 minutes.Frosting:8 oz. cream cheese1 stick oleo1 tsp. vanilla1 1/2 lb. powdered sugar Sprinkle pecans on top.
