  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour - 3 c
  • stick margarine - 1 item
  • coconut - 1 c
  • soda - 1 tsp
  • vegetable oil
  • can crushed pineapple - 1 oz
  • almond - 1 tsp
  • chopped pecans or walnuts - 1 c
  • chopped bananas - 2 c
  • box xxx sugar - 1 item
  • Add all other ingredients and stir by hand until mixed

How to make hummingbird cake:

Sift dry ingredients together in large bowl. Add all other ingredients and stir by hand until mixed. (Do not beat.) Pour into greased and floured 10-inch tube pan and bake at 350° for 1 hour and 10 minutes. Cool in pan.Cream Cheese Frosting:1 pkg. cream cheese (8 oz.)1 stick margarine1 tsp. vanilla1 box xxx sugar Mix well and spread on cake.
