Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla
- chopped pecans - 2 c
- pkg - 2 oz
- salt - 1 tsp
- flour - 3 c
- oil
- soda - 1 tsp
- eggs, beaten - 3 item
- margarine, softened - 1 c
- can crushed pineapple - 18 oz
- chopped bananas - 2 c
- Add eggs and oil, stirring until dry ingredients are moistened do not beat
How to make hummingbird cake:
Combine dry ingredients in a large bowl. Add eggs and oil, stirring until dry ingredients are moistened (do not beat). Stir in vanilla, pineapple, 1 cup nuts and 2 cups bananas. Spoon batter into 3 greased and floured 9-inch pans. Bake at 350° for about 30 minutes. Cool 10 minutes in pan. Remove from pan and cool completely before frosting.Frosting:2 (8 oz.) pkg. cream cheese, softened1 c. margarine, softened2 (16 oz.) pkg. powdered sugar2 tsp. vanilla Combine oleo and cream cheese until soft.
