Holiday potatoes
Ingredients/Components
- pkg - 1 oz
- milk - 1/2 c
- sour cream - 1/2 c
- salt - 1 tsp
- margarine - 1/4 c
- eggs, slightly beaten - 2 item
- Cheddar cheese, shredded - 1/2 c
- dash of pepper optional - 1 item
- potatoes, peeled, cooked and hot about 12 medium - 3 lb
- onions, finely chopped optional - 1/4 c
How to make holiday potatoes:
Mash potatoes with mixer or by hand. When all lumps are removed, add cream cheese in small pieces and then the butter. Beat well until cheese and butter are both melted and completely mixed. Mix in sour cream.To the milk, add the eggs and onion. Add to the potato mixture along with the salt and pepper. Add the shredded cheese. Beat well. Place in a well-greased casserole dish and refrigerate several hours or overnight. Bake in a preheated 350° oven for 45 minutes and lightly browned on top. Makes 8 to 12 servings.
