Hearty cabbage soup
Ingredients/Components
- lean ground beef - 1 lb
- large onions, chopped - 2 item
- cloves garlic, minced - 2 item
- cooking oil - 2 Tbsp
- coarsely chopped cabbage - 7 c
- cans tomato paste - 2 1/2
- diced celery - 1/2 c
- diced carrots - 2 c
- beef stock - 4 c
- green pepper, chopped - 1 item
- can tomatoes or 2 lb - 1 oz
- raw, diced potatoes - 2 c
- salt and pepper to taste - 1 item
How to make hearty cabbage soup:
Saute beef, onions, garlic, celery and green pepper in oil. Add remaining ingredients, except cabbage. Simmer uncovered for 1 hour. Add cabbage. Simmer for 1 hour more, adding more water, up to 3 cups if necessary. Yields 6 to 8 servings.Recipe categories: Potato, Vegetables, Soups & stews.
