  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • salt - 1 tsp
  • flour - 2 c
  • baking powder - 2 tsp
  • baking soda - 2 tsp
  • vegetable oil - 1 c
  • sweet potatoes - 2 c
  • nuts and raisins optional - 1 item

How to make harvest cake:

Blend dry ingredients. Drain sweet potatoes and beat with mixer. Add liquid and dry ingredients to sweet potato puree and blend well. Add nuts or raisins. Pour into a greased and floured 9 x 13-inch pan. Bake at 350° for 35 to 40 minutes or until done. Ice with cream cheese icing or other white icing.
