Ingredients/Components

  • sugar
  • cinnamon - 1/2 tsp
  • butter or margarine - 1 Tbsp
  • salt - 1 tsp
  • nutmeg - 1/2 tsp
  • plus 2 Tbsp - 1/4 c
  • medium green tomatoes - 6 item
  • pastry for 2-crust pie
  • grated peel and juice of 1 lemon

How to make green tomato pie:

Peel and slice tomatoes into fourths (about 4 cups). Mix sugar, flour, salt, cinnamon and nutmeg in bowl. Add tomatoes, lemon peel and juice; toss. Turn into pastry-lined pie plate. Dot with butter. Cover with top crust; seal and flute. Cover edge with 2 to 3 inch strip aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking. Bake until golden brown, 35 to 45 minutes. Bake at 425°. Cut slits in top crust.
