Ingredients/Components
- sugar
- cinnamon - 1/2 tsp
- butter or margarine - 1 Tbsp
- salt - 1 tsp
- nutmeg - 1/2 tsp
- plus 2 Tbsp - 1/4 c
- medium green tomatoes - 6 item
- pastry for 2-crust pie
- grated peel and juice of 1 lemon
How to make green tomato pie:
Peel and slice tomatoes into fourths (about 4 cups). Mix sugar, flour, salt, cinnamon and nutmeg in bowl. Add tomatoes, lemon peel and juice; toss. Turn into pastry-lined pie plate. Dot with butter. Cover with top crust; seal and flute. Cover edge with 2 to 3 inch strip aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking. Bake until golden brown, 35 to 45 minutes.
