Green tomato pickles
Ingredients/Components
- sugar - 2 c
- salt - 2 tsp
- water - 2 qt
- vinegar - 2 c
- alum - 1 tsp
- pickling spice - 2 tsp
- green tomatoes - 24 item
- sliced pimiento - 1 item
How to make green tomato pickles:
Slice tomatoes about 1/4-inch thick. Sprinkle with salt and let stand overnight. In morning, drain and place tomatoes in a solution made with alum and water. Let stand for 1 hour. Drain. Pack into jars.Boil together for 10 minutes: sugar, vinegar and spices. Pour over tomatoes; seal. Process in boiling bath for 20 minutes. Makes 2 pints. Very good!
