Ingredients/Components
- chicken broth
- tomato juice - 1 c
- red pepper flakes - 1/2 jalapeno
- green onions, thinly sliced - 4 item
- chopped fresh cilantro - 2 tsp
- Anaheim chiles, coarsely chopped - 2 item
How to make green chile soup:
Combine all the ingredients, except the cilantro, in a 2-quart casserole. Cover tightly and cook on High for 8 to 10 minutes, or until heated through. To serve: Spoon the soup into 4 cups and sprinkle with cilantro.For 1 serving: Combine 1 sliced green onion, 1/2 chopped Anaheim chile, a couple of slices of jalapeno pepper or a pinch of red pepper flakes, 1/2 cup chicken broth and 1/4 cup tomato juice in microwave-proof soup bowl. Cover tightly and cook on High for 1 1/2 to 3 minutes. Sprinkle with 1 1/2 teaspoons chopped cilantro before serving.
