  • sugar - 2/3 c
  • vanilla extract
  • water - 1 Tbsp
  • heavy cream - 3 Tbsp
  • apricot preserves
  • 9-inch unbaked pie shell - 1 item
  • cream cheese room temperature
  • ripe kiwi fruit - 3 item

How to make glazed kiwi tart:

Filling:1 (8 oz.) cream cheese (room temperature)2/3 c. sugar1 1/2 tsp. vanilla extract3 Tbsp. heavy cream3 ripe kiwi fruit Glaze:1/4 c. apricot preserves1 Tbsp. water Bake pastry according to directions.

Filling: Stir together the cream cheese, sugar and vanilla until smooth. Spread the mixture onto cooled pastry shell. Peel kiwi, slice thin and arrange slices of kiwi on top of cream cheese, overlapping in circles.

Glaze: Combine the apricot preserves and water in a small saucepan and heat until preserves melt. Cool slightly, stirring occasionally. Spoon over the kiwi. Chill tart until ready to use.
