German potato salad
Ingredients/Components
- red potatoes
- small onion, chopped - 1 item
- medium green pepper, chopped - 1 item
- salt and pepper to taste - 1 item
- slices bacon, cut into 1/2-inch pieces - 6 item
- bacon drippings - 1/2 c
- cider vinegar - 1/2 c
- sugar - 2 Tbsp
- eggs, beaten - 2 item
How to make german potato salad:
Boil potatoes in jackets until done. Cool, peel and dice. Add onions, green peppers, salt and pepper and mix well. Fry bacon pieces until crisp and drain. Add 1/2 to salad; mix again. Set rest of bacon aside.Put drippings into frying pan. Dissolve sugar in vinegar. Add mixture to drippings and bring to a boil. Add the beaten eggs and quickly whisk together about 1/2 minute, until mixture thickens. Pour over potato mixture and mix well. Garnish with rest of bacon pieces.
This potato salad is best served slightly warm or at room temperature. Leftovers should be refrigerated. This can be reheated in the microwave.
