Ingredients/Components

  • flour
  • brown sugar - 1 c
  • curry powder - 1 tsp
  • oleo or butter - 3 4
  • tall can pineapple chunks - 1 item
  • 2 can apricot halves
  • 2 can pear halves
  • 2 can cling peach halves
  • 2 can black pitted cherries
  • or 3 sliced bananas optional - 2 item

How to make fruit curry:

Cut all fruit in half or fourths. Drain. Mix the sugar, flour and curry powder together and add to the fruit. Dot the butter on top. Bake at 325° for 1 hour. Can be made ahead of time and reheated. Serves 6 to 8.

I make this for family gatherings and it is a favorite at Wednesday Nite Live buffets!
