  • sugar
  • eggs - 2 item
  • vegetable oil - 1/2 c
  • flour - 2 c
  • salt - 1/2 tsp
  • baking soda - 2 tsp
  • medium can fruit cocktail - 1 item
  • coconut - 1/2 c
  • Icing:1 stick butter
  • evaporated milk - 1/2 c
  • vanilla - 1 tsp
  • nuts - 1/2 c

How to make fruit cocktail cake:

Icing:1 stick butter3/4 c. sugar1/2 c. evaporated milk1 tsp. vanilla1/2 c. nuts1/2 c. coconut Beat sugar, eggs and oil. Add salt, baking soda, flour and fruit cocktail (and juice). Pour into greased sheet pan. Sprinkle with 1/2 cup coconut on top. Bake at 350° for 45 minutes.

Icing: Boil butter, sugar and milk for 1 minute. Add vanilla, nuts and coconut. Spread hot icing over hot cake.
