Ingredients/Components
- cinnamon
- eggs - 6 item
- salt
- chopped nuts - 3/4 lb
- flour
- brown sugar - 3 c
- nutmeg
- soda - 3/4 tsp
- baking powder
- shortening
- molasses - 3/4 c
- cloves - 3/4 tsp
- seedless raisins
- candied cherries - 3/4 lb
- mace - 3/4 tsp
- strong coffee - 1 c
- candied pineapple - 3/4 lb
- dates - 3/4 lb
- currants - 3/4 lb
- grated rind and juice of 1 lemon
- grated rind and juice of 1 orange
- tart jelly - 3/4 c
How to make fruit cake:
Cream together the shortening and sugar. Beat in eggs and sifted dry ingredients alternately with coffee, jelly and molasses. Blend in fruits. Line two 9 x 5 x 3-inch loaf pans with heavy wrapping paper and grease. Fill pans almost full. Bake 2 1/2 hours at 300°. Cover with paper last hour until tester comes out clean. Cool.
