Frog eye salad
Ingredients/Components
- sugar - 3/4 c
- salt - 1/2 tsp
- flour - 1 Tbsp
- lemon juice - 1 tsp
- egg, beaten - 1 item
- whipped topping - 1 c
- crushed pineapple - 1 c
- pineapple juice - 2/3 c
- mini marshmallows - 1 c
- mandarin oranges - 2 c
- chunk pineapple - 1 c
- acini de pepe - 1 c
How to make frog eye salad:
In small saucepan, mix sugar, flour and salt. Stir in pineapple juice and egg. Cook over moderate heat, stirring constantly, until thickened. Add lemon juice; set aside. Cool.Cook acini de pepe according to package directions. Combine cooked mixture with acini. Cover; place in refrigerator until chilled. Combine remaining ingredients lightly. Chill at least 1 hour.
Acini de pepe is a mini macaroni.
