Ingredients/Components

  • sugar - 2 c
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • pkg - 1 oz
  • salt - 1 tsp
  • flour
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • cooking oil - 1 c
  • margarine - 1/2 c
  • eggs, well beaten - 3 item
  • ground cinnamon - 1 tsp
  • ground nutmeg - 1 tsp
  • Beat in eggs
  • chopped, peeled Delicious apples - 4 c
  • ground pecans optional - 1 c

How to make fresh apple cake:

Combine oil and sugar. Beat in eggs. Sift together dry ingredients; add to egg mixture. Fold in vanilla, apples and pecans. Bake in a 9 x 13-inch pan at 325° for 55 minutes. Cool; ice cake with Vanilla Cream Cheese Icing. Cake will keep moist and fresh for days. Serves 12.Vanilla Cream Cheese Icing:1 box confectioners sugar1 (8 oz.) pkg. cream cheese1/2 c. margarine2 tsp. vanilla1 c. chopped pecans Have all ingredients at room temperature. In a large bowl with mixer, beat sugar, cream cheese and margarine at low speed until smooth. Add vanilla, then stir in pecans.
