  • sugar - 3/4 c
  • milk - 3 Tbsp
  • salt - 1/4 tsp
  • baking powder
  • egg - 1 item
  • sifted flour
  • soft shortening 1/2 butter - 1/2 c
  • currants or raisins, cut up - 1/2 c
  • finely sliced citron - 1/2 c

How to make english tea cakes:

Mix together thoroughly: shortening, sugar, egg and milk. Sift together and stir in flour, baking powder and salt. Mix in citron and currants or raisins. Chill dough. Roll into balls the size of walnuts. Dip tops in slightly beaten egg white, then sugar. Place sugar-side up, 2-inches apart, on ungreased baking sheet. Bake until delicately browned. The balls flatten some in baking and become glazed. Bake at 400° for 12 to 15 minutes. Makes about 3 dozen, 1 1/2-inch cookies.
