Ingredients/Components

  • sugar - 2 c
  • vinegar
  • chopped onion - 1 c
  • chopped celery - 1 c
  • celery seed - 1 Tbsp
  • chopped cabbage - 1 c
  • chopped bell pepper - 1 c
  • mustard seed - 2 Tbsp
  • turmeric - 2 Tbsp
  • sliced cucumber - 1 c
  • whole kernel corn - 1 c
  • lima beans - 1 c
  • cut green beans green - 1 c
  • cut green beans yellow - 1 c
  • carrots, scraped and finely cut - 1 c

How to make end of the garden relish:

Soak cucumber, pepper, onion and cabbage in salt water (1/2 cup salt to 2 quarts water) for 30 minutes. Combine remaining ingredients and bring to a boil. Turn heat on low and simmer for 15 minutes. Add raw, soaked vegetables. Boil again for 15 minutes. Put in hot, sterilized jars and seal. Makes 6 to 7 pints.
