End of the garden relish
Ingredients/Components
- sugar - 2 c
- vinegar
- chopped onion - 1 c
- chopped celery - 1 c
- celery seed - 1 Tbsp
- chopped cabbage - 1 c
- chopped bell pepper - 1 c
- mustard seed - 2 Tbsp
- turmeric - 2 Tbsp
- sliced cucumber - 1 c
- whole kernel corn - 1 c
- lima beans - 1 c
- cut green beans green - 1 c
- cut green beans yellow - 1 c
- carrots, scraped and finely cut - 1 c
How to make end of the garden relish:
Soak cucumber, pepper, onion and cabbage in salt water (1/2 cup salt to 2 quarts water) for 30 minutes. Combine remaining ingredients and bring to a boil. Turn heat on low and simmer for 15 minutes. Add raw, soaked vegetables. Boil again for 15 minutes. Put in hot, sterilized jars and seal. Makes 6 to 7 pints.Recipe categories: Condiments, etc., Onions, Peppers.
