Ingredients/Components

  • Velveeta cheese - 1 lb
  • can cream of chicken soup - 1 item
  • chopped onions - 1 c
  • ground beef - 2 lb
  • can cream of mushroom soup - 1 item
  • can evaporated milk - 1 oz
  • can enchilada sauce - 1 oz
  • corn tortillas, quartered - 18 item

How to make enchilada casserole:

Cook meat with onions until tender; drain fat. Pour some of the meat and onion mixture over quartered tortillas in large casserole dish. Mix cheese, undiluted soups, sauce and milk together in a saucepan. Heat until cheese is melted. Pour some of this over the meat and tortilla mixture. Put another layer of quartered tortillas on top with meat mixture and repeat until tortillas, meat and sauce are used. Bake, uncovered, at 375° for 30 to 40 minutes.
