Enchilada casserole
Ingredients/Components
- garlic powder - 1/2 tsp
- pepper - 1/4 tsp
- shredded Cheddar cheese - 1/2 c
- lean ground beef - 1 lb
- medium onion, chopped - 1 item
- Monterey Jack cheese - 1/2 c
- can enchilada sauce - 1 oz
- 6-inch corn tortillas, cut into 8 wedges - 6 item
How to make enchilada casserole:
To brown meat, crumble ground beef; add onion. Place in 1 3/4-quart casserole. Cook, covered, on 100% power (High) for 4 to 5 minutes or until meat is no longer pink, stirring once. Remove, drain and wipe out casserole. Transfer cooked meat and onion to casserole. Stir in enchilada sauce, garlic powder and pepper. Gently fold in tortilla wedges and cheese.
